beef chuck
1/2 vidalia onion, sliced
1/2 red pepper, sliced
3 scallions diced
1 garlic clove chopped finely
olive oil
oregano, thyme, sage, 1 tbsp cumin, cayenne, paprika, goya sazon packet, black pepper
1/2c sliced button mushrooms
1 can of Harpoon IPA beer
2c~ water
1 tbsp tomato sauce
Sear beef first. Then add onions and garlic. Add everything else except for all the water. Let simmer for 4-5hrs. Pour water in gradually, as it evaporates. Keep water level above meat. Rake off l'ecume (the froth). I served over homemade mash potatoes, but I could have easily dumped chopped potatoes into the stew.
