Homemade Spearmint Tea

coffee filters
stapler
string
paper, pen, scissors

dried spearmint from the garden (The mint is from the spring, I let it dry in a cardboard box in a cool, dark place (the garage) for 3 months)

Shred the mint between hands.  Create cone with coffee filter and fill with mint.  Fold filter closed, use scissors to cut extra paper off.  Staple ends,  attach string with stapler, create skots at ends of string.  Run other side of string through a hole in paper label and make a knot.  And Voila!

Kale Pizza, Teriaki Beef Pizza

ground beef
onion
scallions
garlic
soy sauce
ginger
brown sugar

Sautee mix and put over pizza.  Pizza on bottom left has a bed of kale under the beef.  Top left is just kale.  Bottom right pizza is just beef.  Top right pizza has chopped onions, scallions, and a little kale.

Oven Roasted Chicken

Whole Chicken
oregano, thyme, lemon, s/p, olive oil
potatoes

Clean chicken and pat down dry.  Season, put chopped potatoes around.  Throw in the oven for 2hrs at 350-375F.

Baked Omelette/ Crustless Quiche

 Sliced sausage
3 slices of bell pepper
1/2 sliced onion
1/2c sliced mushrooms
oregano, thyme, s/p
4 eggs
provolone
olive oil

Sautee onion, bell pepper, mushrooms, sausage with a lil olive oil.  Add herbs.  Beat 4 eggs (I was out of milk).  Lay filling into baking dish and pour eggs over.  Cover with cheese.  Bake in oven for 20min til brown

Harpoon Beef Stew

beef chuck
1/2 vidalia onion, sliced
1/2 red pepper, sliced
3 scallions diced
1 garlic clove chopped finely
olive oil
oregano, thyme, sage, 1 tbsp cumin, cayenne, paprika, goya sazon packet, black pepper
1/2c sliced button mushrooms
1 can of Harpoon IPA beer
2c~ water
1 tbsp tomato sauce

Sear beef first.  Then add onions and garlic.  Add everything else except for all the water.  Let simmer for 4-5hrs.  Pour water in gradually, as it evaporates.  Keep water level above meat.  Rake off l'ecume (the froth).  I served over homemade mash potatoes, but I could have easily dumped chopped potatoes into the stew.

Pulled Pork

10lb pork shoulder (bone in)

kc dry rub
soy sauce
honey
sugar
ginger
pepper
garlic/pesto mix

onion and carrot rough chopped

Put rack in roasting dish, spread the veggies on the rack and lay the meat on top.  Bake in oven at 250F for 8hrs~ (could have gone for longer).  Wrap with tin foil, let it rest an hour.  Pull with forks.  Re-heat the bottom of the roasting dish on stove top, veggies included.  Add 1/2-1cup water, 1 tbsp flour, lil butter.  Mix around, scrape all the good stuff off the bottom.  Pour some au-jus/gravy over the pulled meat, add bbq sauce.
