Thai Green Curry with Roasted Chicken Drumsticks

Roast chicken in oven with olive oil, thyme, oregano, s/p.

Start onions, peppers, tomatoes in a pan.  Add curry paste(I use maesri) and cook down.  Add can of coconut milk.  Add a little water if necessary.  Dump in can of peas and chicken once browned.

I served it over mashed potatoes.


Chorizo and Chicken Jambalaya Stuffed Vegetables

 Chorizo (slice)
Chicken (leftover oven roasted)
Chopped vegetables, onion, bell pepper, zucc.
Rice
tomato sauce
thyme, oregano, cumin, cayenne, s/p, paprika
garlic (minced)



Stuff Jambalaya into zucc. and bell peppers.

 Topped with slices of brie. Bake till browned.

Serrano Hot Sauce

 Serranos from 2015 I had to get rid of....because I then have 30-50 frozen from 2016.  This is partly why I grow serranos--they are so prolific.


Serrano Peppers 10-20
olive oil
lime
fresh salsa
white vinegar
salt


Blend the mixture.  Heat the mix in a sauce pan, let simmer for 5min~ Strain liquid and refrigerate.

Green Onions (regrown from supermarket):
Chop off the ends(1in~) and stick into some dirt.  You don't have to put it in a glass of water first.

Slowcooker Pork Stew


Pork tenderloin (cut into large chunks
Red Bell Pepper (rough chop)
Potatoes
Onion
Water
Thyme, Oregano, Sage, S/P
Garlic, Cumin
Lime
Beer

Dump everything into slowcooker and let go all day.   Take chunks out and pull.  Put back into dish and let cook another hour or so.
