Garden 8/4/14

Saucisson Basil Pizza and Serrano Pizza

Saucisson Basil Pizza

3-4 slices saucisson cubed small
3-4 leaves of basil chiffonade
Tomato sauce
Shredded cheese
2 tortillas



Serrano Pizza

1 Serrano pepper sliced thin
Shredded cheese
Tomato sauce
1 tortilla

Prosciutto Beet Greens Pizza

A bunch of beet leaves shreddred
2-3 slice of prosciutto cubed
From homemade pesto mix
Olive oil, s/p, fresh basil and oregano
2 tortillas
Tomato sauce
Shredded cheese

Start olive oil in a pan with beet leaves, prosciutto, seasoning, and pesto.  Once cooked down, start assembling pizzas.  On cookie sheet, places tortillas, use spoon and spread tomato sauce.  Add cheese, top with beet leaves/prosciutto mix.  Bake in oven at 400F for 15min~

Stuffed Swiss Chard Vegetarian

 A bunch of swiss chard
Fresh oregano, basil, chopped
S\p, rosemary, pesto froz mix
Tomato sauce
Provolone cheese, cubed
5-6 cherry tomatoes, halved
1/2 orange bell pepper cubed 1/4in
1/2 zucchini cubed 1/4in
Basmati rice

 Boil two pots of water, one for rice and one to Blanche the chard.  Once chard is blanched toss into fridge.  Start oil in a pan with pesto mix, veggies, herbs, seasoning.  I had a few imperfect leaves that I knew would not work for the roll ups.  I shredded those and dumped them into the veggies that were about halfway.

The rice finished and I ran it in under some cold water using a colander.  The veggies are just about ready. Time to make the rollups.  You can do that vertically or horizontally, I prefer vert with big leaves, and horiz. with small ones.  Use same technique as for wraps and burritos.  Stuff w rice, veggies, and cheese.  Lay them in a baking dish, cover with tomato sauce and put cheese slices on top.  Bake in the oven for 20min at 400F til cheese is golden.  I had extra veggies and rice I mixed together and served on the side.

Variation of the swiss chard pizza

4-5 leaves of swiss chard, shredded like you would iceberg lettuce
1 small to med onion, sliced thin
1 tsp frozen homemade pesto mix
1/4c. oregano from garden chopped, s/p
1/2 c. shredded monterey jack cheese
3 10in tortillas
1 tsp olive oil
3 tbsp tomato sauce

Start onions in a pan with olive oil, add chard, pesto mix, oregano, s/p.  Cook down for 5min.  Spread tomato sauce on tortillas, add cheese, put some topping from sautee pan.  Bake for 10min~ at 400F.
