Mango Crumble

4 ataulfo mangos
1/2 ccup brown sugar
pinch of nutmeg and ginger
1 tsp cinnamon
a touch less than 1/2 cup butter
3/4 cup flour
3/4 cup oatmeal (I crumbled up a couple nutrigrain bars using a ziplock bag and a hammer)
pinch of salt

loosely followed this recipe

  • Preheat the oven to 350.
  • Place the sliced mango in a saucepan with brown sugar, cinnamon, and nutmeg.
  • Cook on low- medium low, stirring often for 5 minutes.
  • For the crumble:
  • Put the flour into a large mixing bowl and rub the butter in with your fingertips. You want the ingredients to start to hold together,but will still break apart.
  • Add sugar, cinnamon, salt then the oats and mix.
  • Spoon the mango mixture into a small buttered ovenproof dish and sprinkle over the crumble topping.
  • Bake for 30-40 minutes until the topping is golden brown.

Swiss Chard Pizza


swiss chard (bright lights from the garden), shred a touch thicked than you would iceberg lettuce for a sandwich (4-5 big leaves)
mushrooms (sliced)
garlic (diced)
ground beef (1/4 lb)
monterey jack cheese shredded
tomato sauce
mixed fresh herbs (chives, parsley, oregano)
10in flour tortillas

Start garlic, chard, mushrooms, and ground beef in a pan.  Add herbs.  Crumble/break apart ground beef.  Break out a cookie sheet, preheat your oven to 350-400F.  Spread tomato sauce on tortillas, leaving a little 'crust' border.  Add cheese then filling or vice versa (I tried both ways, no difference, really).  Bake for 15~ til lightly golden brown.

Fresh Cherry Pie

So I used this recipe

with half the sugar (so 1/2 cup) and it was still too sweet..

I didn't use almond extract.

I used maybe 2 cups of fresh cherries instead of 4..

and I finished the pie with a lattice top found here..
it was my first time making the lattice top.  I basted it with egg yolk before slicing the dough into strips and everything.  Next time I'll add less liquid from the cherries so it doesnt go over the lattice.
