Quiche Crust from scratch, Mushroom Quiche..and a Light Quiche Lorraine

Easy olive oil quiche crust 

1/4c olive oil
1/4c water
1c flour
s,p
adjust flour/liquid a touch till the dough isnt dry and doesnt break apart with a little tension
ball up dough and wrap in plastic wrap
let sit in fridge for 1hr--or made too much? freeze the extra!!

Mushroom Quiche

1 1/2-2c of sliced button mushrooms
1/4 white onion
1 clove of garlic
touch of sriraacha
1 c of milk (i used 2%)
3eggs
fresh thyme sprigs,sp
1c of cubed monterrey jack cheese

saute a tbsp of oil/or butter in pan, toss in the garlic and onion, then the mushrooms..throw a few thyme sprigs on top n s/s...in the mean time beat the eggs with a whisk, add milk and cheese and srirraacha (i put a tsp maybe just to liven things up, along with the jack cheese).

i flatten the dough out by hand directly into the pre buttered quiche pan (get better consistency by rolling it out with a roller and everything of course, but its a whole ordeal sometimes to take it all out). ake whole with a fork

set oven to 400. put crust in for 10-15min
take the crust out when ready
by now your mushrooms should be cooked down, take the thyme sprigs out and spread the mix evenly across  the crust. then pour over the egg/milk/cheese mix over

put back into oven for 35min~ at 400 or until browning




Simple Quiche Lorraine

1c milk
3 eggs
chopped fresh parsley, s/p
1c black forest ham (sliced, then cubed)
1c swiss cheese (sliced, cubed)

beat eggs, add everything together
pre bake crust like in recipe noted above, pour in the filling
bake at 400 for 35 or until brown

Mm mm Spicy? Meatloaf

last week sometime but ill jot this down

half of huge pack of ground beef from sams (2.5lb?
half a white onion
half a jalapeno
red hot, ketchup, bbq sauce
cayenne, s,p, cumin, herbs de provence, paprika,
one egg
1/2 cup~bread crumbs
fresh cilantro
half lime

chop onions and dice jalapeno super fine
mix everything together with your clean hands
shape into a log, i throw a light bed of bread crumbs down in pyrex 9x13 dish w/ 2.5in sides..and rest the meat ontop

bake at 400 for 45min-1hr
take it out and let rest 15min before eating

Last Weeks Killer Potatoes

fresh thyme and rosemary
butter
potatoes
tin foil

put half a tbsp of butter, and a sprig of thyme and rosemary in w/ potato, cover twice so it doesnt leak

toss em in the oven for an hour or so at 400

Last Nights Lasagna

2 packs of ready to bake no boil lasagna pasta
can of crushed tomatoes
ground beef(half of one of those huge packs at sams...maybe 2.5lbs?or 1?)
tomato sauce
butter, milk, flour
garlic
fresh basil, herbs de provence dry, s, p,
nutmeg
fresh mozz(buffalo), swizz, shred mozz
prep 30min~

brown meat, add sauce and crushed tomatoes and sauce(3/4 of each crush n sauce) and minced garlic and herbs seasoning..near the end of cooking the meat off start on your bechamel->

melt butter(4.5tbsp), add flour until clumpy n brown (a rue), add milk slowly while stirring(i use a whisk to try n speed things up)..until thickened. add salt pepper and a dab of nutmeg

cover bottom of deep dish pan(9x18x3.5in deep) with some sauce, layer pasta next, then coating of bechamel, then cheese, next meat sauce(healthy amt). repeat process til about .5in-1in from top. top layer i do pasta, whats left of bechamel and covered well w cheese. [i put the fresh mozz in the center layer of the lasagna in contact w/ plenty of meat

bake at 400 for 35min. or until brownned

Biscuits

1 1/2 cup of pancake mix
1/2 cup of milk

mix w whisk, use a round to shape- i did 2 1/2in diameter, 1in thick

bake at 400 for 15min~

came out just O.K. they pancaked out a lil as i layed them onto the sheet pan, so the traditional shape was distorted..

Dinner:

London Broil Steak (defrosted during the day)
had been frozen in Big Hawaii Teriaky Spiedies Sauce (gluten free)

pan seared both sides w a lil olive oil, s&p

bake at 400 for 34min~

came out MR all the way through to perfcection

Broccoli au gratin
blanched broccoli in boiling water for 15-20min~
in the mean time i made a bechamel sauce(2tbsp butter, flour, milk)

drain broccoli, and lay a bed on bottom of a deep baking dish (i used a glass 9x13 2-3in deep)
pour bechamel over broccoli and then covered with 3 slices of swiss and a lil shredded cheddar
bake at 400 for 15-20min~ until brown (could have been better if i had made more bechamel, it really has to cover all the broccoli generously or the veg will dry out.

Quick mix potato flakes w garlic
2-4tbsp butter melted in a pan, diced garlic throw in w butter once it is almost melted- dont let it burn
then continue to prepare potatoes according to the box


it didnt seem like much when i was finished but it took me approx 30-45min of prep/cooking while the meat was in the oven
